The Best Gift

I am incredibly lucky to have a friend who has been kind enough to share her beautiful daughter with me for almost 20 years. Caroline is just 7 months younger than Richard so they grew up together. When they were little they used to write and perform the most hilarious plays.  The best ones were frequently musicals that involved songs about cats or food.  Caroline has progressed far beyond songs of cats and food  - not so much Richard! 

When I made Richard’s cookbook it was, of course, for Caroline too, and she took a copy off to Sewanee with her. She and I both love to cook for friends and her mom is a fabulous hostess as well, so the very next weekend she entertained her roommate Jenna, and other college pals with a coffee cake brunch from the cookbook.

I get so excited when Caroline is home for the weekend!  We all decided to have an afternoon of porch knitting, my favorite activity, which definitely had to involve a delicious snack. It didn’t take us long to decide on Sweet Potato Fries with our own doctored up ketchup right from the cookbook.

Well YUM. It would be just plain mean to talk about these, show these mouth-watering pictures, and not include the recipe, so here it is. If you are watching the Titans at home, it’s perfect football food!

Sweet Potato Fries

Ingredients

2 sweet potatoes, cut in 1/4 inch thick fries, you can leave the peel on

2 Tbsp olive oil

1 tsp each, salt, paprika and pepper, or to taste (you can experiment with other seasonings, Like Old Bay or Montreal Steak Seasoning)

Directions

Preheat oven to 450 degrees.

Put potatoes in a medium bowl with oil and seasoning and toss to coat. 

Line a cookie sheet with parchment paper or aluminum foil. (hint: The parchment paper is great to have because nothing sticks to it. You find it with foil and baggies.)

Spread potatoes in pan so they aren’t touching and bake for about 20 minutes, turning once.

*Make it special with really fun ketchup. Combine 1/4 c ketchup and 1/4 c barbeque sauce. That’s delicious! Shake it up again for a different taste by adding 1/4 c salsa.
