Last Minute Spaghetti for Two


8 oz of spaghetti or pasta of choice

salt for pasta water

2 Tbsp olive oil

2 cloves garlic, chopped

1/4 tsp red chili flakes, optional

1/2 c grated Parmesan cheese


Bring a large pot of water to boil add about a Tbsp of salt as soon as the water boils, then add the pasta. Cook pasta until tender, not mushy.

While the pasta cooks, put the oil, garlic and chili flakes, plus a pinch of salt in a skillet over medium low heat. Cook until the garlic sizzles and starts to brown. Take the skillet off the heat.

When the pasta is done, drain it reserving a little of the cooking water. Toss the pasta with the garlic mixture adding a bit of the reserved cooking liquid if it seems dry. 

Top with cheese and enjoy! There are many things you could add to this, fresh herbs, breadcrumbs, even a fried egg. It’s as easy as it is versatile.
