Carrot Cake


1 cup vegetable oil

1/2 cup buttermilk

4 eggs

2 tsp baking soda

1 tsp salt

2 tsp cinnamon

2 cups flour

3 cups fresh grated carrots (the food processor makes this a cinch, but you can buy grated carrots at the grocery)

3/4 cup walnut pieces

1/2 cup raisins


8 oz cream cheese at room temperature

1/4 cup (1/2 stick) butter at room temperature

1 box (16 oz) powdered sugar


Preheat oven to 300 degrees.

Spray 3 cake pans with baking spray (or butter and flour pans).

In an electric mixer combine oil, buttermilk and sugar. Mix in eggs.

Add dry ingredients and combine thoroughly.

Mix in carrots, walnuts and raisins.

Pour in prepared cake pans and bake for 50 minutes until centers are firm.

Cool completely.

Make icing: In an electric mixer, combine cream cheese and butter. Add confectioners sugar and blend until smooth.

I like to ice the tops of all layers since the icing is so rich!
