Grilled Chicken and Pepper Chili

1 Tbsp olive oil

1 onion, chopped

½ tsp salt

1 red pepper, chopped,

1 poblano pepper, chopped

1 clove garlic, chopped

1 Tbsp chili powder

1 tsp ground cumin

1 tsp dried oregano

1 can diced tomatoes

3 cups chicken broth

1 can black beans

1 cup frozen corn

2 cups (give or take) leftover grilled chicken, cut in bite size pieces

Optional garnishes: sour cream, lime, jalapeno peppers, cheese, cilantro, corn chips – anything you like with chili


Heat olive oil in a large Dutch oven or pot over medium high heat.

Add onion and salt and saute for a minute or two to soften.

Add peppers and garlic and saute, for about 5 minutes until soft.

Stir in chili powder, cumin, and oregano.

Add tomatoes, chicken broth, beans, corn and chicken.

Simmer for 10 to 15 minutes, taste for salt.

Serve with desired garnishes.
