Raising the Potato Bar

The only highlight of an absolutely hideous football afternoon was that not only did Richard come over, but I got to grab my nephew Phelps after church and bring him home to watch the game. Well, I hope the food was a highlight too, because we devoured a feast.

Richard and Phelps helped make one of my favorite party foods, a potato bar. I served it last week for a cocktail party with friends and it was so much fun, I knew the guys would enjoy it. Who doesn’t like mini baked potatoes with everything you can imagine to load them up. The toppings may change depending on what’s in the fridge, but that’s half the fun. I’ve got that recipe right here because you’ll want to try this immediately. We even love potato bar for dinner.

We made twofabulous pizzas using Trader Joe’s refrigerated crusts, a homemade white sauce on one, and a fresh tomato sauce on the other. Lots of sweet chicken sausage, garlic, tomatoes and spinach went on the white one and pepperoni and sausage on the other. Phelps asked for the recipe for the white pizza!! Watch out girls – smart, good looking, and he can cook.

I was totally busted by my own blog about the pumpkin cake. Saturday afternoon I gave mine away to that famous mayor’s twin and her son Don, who were in town for the day and came by to visit. Well Richard read about the cake yesterday morning  (I suspect he just looked at the pictures) and was completely FURIOUS to find that it wasn’t here. I did what any mom who spoils her son constantly would do and baked him another. Since Phelps was here I had to make his favorite chocolate strawberries too. What can I say, even the Titans can’t spoil a day with two of my favorite guys or even my appetite. 

Mini Potato Bar

Ingredients

New potatoes

Olive oil

Montreal Steak Seasoning or a mix of garlic salt and pepper

Toppings can always be your choice -  we had: Cheddar and blue cheese, sour cream, chives from the garden, smoked salmon, caviar (just the Kroger kind), bacon, salsa, and pepper jelly. Always think leftovers and grocery salad bar!

Directions

Preheat oven to 450 degrees.

Line a rimmed baking sheet with foil and put in the potatoes. Coat potatoes with a couple of Tbsp of olive oil and a generous sprinkle of seasoning. Roll around to cover.

Bake for about 30 minutes until soft.

Using a melon scoop or small spoon, scoop out a hole in the top. (Put the scooped out holes in a small bowl and when no one is looking at you, throw in some butter and salt and pepper and eat them all yourself.)

Serve potatoes and toppings and enjoy the compliments!
