It’s the Pits...

My friend Karla loves a new gadget. But she is a thrifty girl, originally from up north, and she doesn’t waste time or money on superfluous stuff. When she surprised me with my own cherry pitter, I knew it must be worth its space in the kitchen drawer. It is. Put a cherry in the clever holder, squeeze, and there you have it – a perfectly pitted, still intact, beautiful fresh cherry. No stem, no seed, no mess. The best part is that – its kind of fun. My husband watched me pit a couple of cherries and announced he would “take over” the job.

That is because he too loves a new gadget, not because he was worried about me working too hard in the kitchen.

Whether you have a cherry pitter or not you should whip up this cobbler. Cherries are fresh and plentiful in the grocery right now.

A knife will also do the job minus the entertainment value. The truth is, you can use almost any berry you like. You could even mix them up. The recipe is so simple once you’ve made this cobbler the first time you can practically do it in your sleep.

First, put a stick of butter in a pie pan or small casserole. Let it melt in the oven while it preheats. Mix up one cup each of milk, flour, and sugar, and add a pinch of salt and baking powder.

I used half milk and half buttermilk and liked it too, but really it’s hard to improve this particular recipe. Pour the batter on the melted butter and top with cherries.

If you put this in the oven just when dinner is served, a piping hot Cherry Cobbler is only 40 minutes away. Topped with vanilla ice cream this is a spectacular dessert that will delight and amaze friends and family. If you are very lucky, you’ll have some leftover for breakfast. That’s me – I’m that lucky today! Happy Saturday!



Cherry Cobbler

Ingredients

2 cups fresh or frozen pitted cherries (Substitute blueberries, blackberries or any fruit you like.)

1 stick (1/2 cup) butter

1 cup sugar

1 cup milk

1 cup flour

2 tsp baking powder

½ tsp salt

Directions

Preheat oven to 350 degrees.

In a pie pan or 8 x 8 casserole, melt butter in the oven as it preheats.

Combine sugar, milk, flour, baking powder, and salt in a mixing bowl.

Pour sugar mixture over the melted butter.

Add fruit evenly over the top of the batter.

Bake for 35 to 40 minutes until batter is golden brown.

Serve warm with ice cream. Enjoy!
