It’s Fun to Say Clafoutis (And fun to eat it!)

Don’t let the fancy French name fool you. If you have a blender or mixer, Honey, and Bourbon, Peach Claufoutis is one of the easiest desserts you’ll ever make.

Or wait – let’s not get picky this can be a dandy breakfast/brunch treat. Umm …and good for a cold leftover lunch, late night, snack, and that about covers it. If this amazing versatility combined with that impressive name doesn’t win you over then you are beyond help. Cooking with honey, bourbon and peaches – especially this time of year just reminds me how great it is to live in the South.

The peach stands are everywhere, you can pick your bourbon, Kentucky, Tennessee, or switch it up with a liqueur like Amaretto for a sense of adventure. The honey is from our back yard, hard to get more local, but every farmer’s stand and many markets have delicious local honey. The bottom line is that this is a very forgiving recipe that you can adapt to suit your needs and preferences. For example, once I was short on milk and added sour cream. Now that was the best substitute ever and is now considered by my “testers” to be an essential ingredient.

 It also seems necessary to mention that the original French version used cherries – not peaches. If experimenting is your game, this recipe has your name! Still you should try this version first. The hardest part is peeling and slicing 4 peaches. You can do it. Everything else goes in the blender and gets poured over the peaches. Bake and serve. There. That’s it. Sometime in the next day or two you’ll pass a peach stand and think of how this delicious dessert would brighten someone’s day. I promise it will brighten yours. Enjoy!


Honey Bourbon and Peach Clafoutis

Ingredients

4 ripe peaches, peeled and sliced

1 cup milk

½ cup sour cream

3 eggs

¼ cup sugar

¼ cup honey

½ cup flour

2-3 Tbsp bourbon (or 1 tsp vanilla)

¼ tsp ginger

¼ tsp salt

(Optional: Powdered sugar or whipped cream for serving)

Directions

Preheat oven to 375 degrees.

Coat a pie pan or similar size baking dish with cooking spray.

Scatter peaches in prepared pan.

Mix remaining ingredients in the blender (or by hand) until well combined.

Pour over peaches and bake for 30 minutes or until center is set.

Cool slightly before serving.

Top with powdered sugar or whipped cream if desired.
