Easy Last Minute Gift

It’s a week before Christmas, all the stores are packed, traffic has reached a new level of hellishness, and in truth, there just isn’t much shopping time left. For the last few days, a Christmas song by Amy Grant, “I Need a Silent Night” has been running through my head on constant replay. If you feel like this, I can help with a last minute gift idea. It’s just the perfect thing – a wonderful little box or bag of these delicious Curry and Garlic Candied Pecans will do the trick. My friend Margaret has been making these for years. All I did was add a hint of garlic and a little heat to give them an extra punch. Recently I served Curry and Garlic Candied Pecans at a party, and if judging by the number of friends requesting the recipe is any indication, then they were a huge success. When my neighbor, who is a very discriminating cook, asked for the recipe too – I knew it was time to share. This is a perfect last minute gift. The recipe costs less than $10 to make, it take only minutes of preparation and then your work is pretty much done. These make a lovely hostess gift too. Everyone loves a homemade gift and you can feel really good about giving this one.

For packaging those little tins you see everywhere this time of year are great, or an attractive jar with a ribbon around the top is pretty too. Curry and Garlic Candied Pecans

Ingredients

1 lb pecans

1 egg white

¾ c sugar

1 tsp curry powder

1½  tsp garlic salt

1 ½ tsp kosher salt

  tsp cayenne pepper

Directions

Preheat oven to 250 degrees.

Line a cookie sheet with foil and spray with cooking spray.

Spread pecans on the cookie sheet and toast for 10 minutes.

In a large bowl, whisk egg white with 1 tsp of water until frothy.

Stir in seasonings and sugar.

Add pecans, mixing to thoroughly coat them.

Return to cookie sheet and bake for 1 hour until pecans are dry, stirring twice.
