A Valentine's Day Dessert

Here is a beautiful and delicious dessert for a sweet finish to your Valentine’s Day Dinner. Everyone thinks dessert has to be chocolate for Valentine’s Day and chocolate is nice, so if you must have it, buy, or encourage your significant other to buy a small, elegant, box of chocolates and serve them along side your Raspberry Brulee.

This dessert was the reason I used to pick a certain restaurant when it was my turn to choose a dinner out. The restaurant is long gone, but the dessert became a staple in our list of favorites. It’s so simple to make you’ll be serving it all the time. Raspberries seem luxurious but feel nice and light after a heavy meal, making this dessert perfect for Valentine’s Day when you don’t want to end the evening snoring on the couch because you ate too much and fell asleep – not that that ever happens in our house. (sarcasm intended)

I wholeheartedly believe that Valentine’s Day has become an industry that we don’t care to support so my Valentine’s Day present to my husband is a beautiful dinner. Sometimes a great memory is the best present, right? It feels even more special with a pretty table. I happen to have a set of heart shaped ramekins that will work for this dessert, but any custard cup will do, even a heat-proof cereal bowl would work.

This year I will use quince and daffodils from my yard because it’s been so warm, but I like to mix and match flowers from the grocery too. Candles elevate any dinner, plus don’t we all just look a little better in candlelight so candles on the table, definitely. A champagne toast and well, it’s a great way to say, “I love you and thanks for loving me right back.” Enjoy this dessert anytime!

Raspberry Brûlée

Ingredients

6 oz box of fresh raspberries

4 oz raspberry liquor (Chambord is a popular brand, but there are lots of others)

1/2 cup sour cream

4 Tbsp brown sugar

* This is a guideline of amounts. Make it fit the dishes you use. Honestly, I never measure for this dessert, it’s a visual dish.

Directions

You have two options for browning the sugar on this dessert and both work just fine. The first is to put an oven rack as close to the broiler as possible and heat the broiler for 5 minutes. Put the dessert under the broiler, watching constantly, to lightly brown the top. The second is to use a propane kitchen torch if you have one, to brown the top. Both methods take 1 to 2 minutes, making this a breeze to serve, as it should be for your celebration dinner.

Put raspberries in a small ramekin dish and pour raspberry liquor over the top.

Ice the raspberries with sour cream. (At this point you can put this in the refrigerator until dessert time.)

When you are ready to serve dessert, sprinkle the sour cream topping with brown sugar and broil the top.

Isn’t that the easiest dessert ever?
